The history of Tabasco hot sauces began ten years before the Civil War, when the company founder received Tabasco chilli seeds from a friend who had brought them back from the Mexican state of the same name. Even today, the world-famous sauces are made from the fruits of Tabasco chili plants, which are mostly grown in Central and South America. The peppers are very hot in themselves and easily reach 40,000 SHU on the Scoville scale.
Scoville scale
As is so often the case, the name of the scale, Scoville, is the surname of the inventor. In 1912, the pharmacist Wilbur Scoville developed a method to determine the capsaicin content in chilies. Just to give you an idea: Pure capsaicin reaches 16 million Scoville, and one of the hottest chili varieties reaches almost 2.5 million SHU. But even Bhut Jolokia chilies with their one million Scoville are not meant to be enjoyed. For most people, 500 to 10,000 Scoville is considered pleasant. But for you, probably one of the chili junkies, the fun only starts at 70,000 Scoville units.
Scoville diluted chilies with water until a group of “volunteer” testers (a little joke) could no longer taste any heat. The amount of water added, measured in drops, is converted into Scoville Heat Units (SHU). That’s why we’re talking about 4,000 Scoville Units for the mild heat of the classic Tabasco Original Red Sauce and millions for the hottest chili fruits (Pepper X / Carolina Reaper).
